Beef and cheese stuffed bell peppers

Beef and cheese stuffed bell peppers

  • 4 bell peppers
  • 2 beef steaks, diced (about ½ inch)
  • 2 cups cheese (cheddar or mozzarella or any variety you like), shredded
  • 1 tbsp coconut oil
  • 4 tbsp cream cheese
  • 2 tbsp dried or fresh basil
  • 1 tbsp paprika
  • chili flakes (optional)
  • salt and pepper to taste
    Instructions
  • 1. Preheat oven to 400 degrees Fahrenheit
  • 2. Mix cream cheese with basil
  • 3. Cut top off of the bell peppers and remove core
  • 4. Cook in lightly salted water about 5 minutes, then drain and put aside
  • 5. Lightly brown beef in coconut oil, season with salt, pepper and paprika
  • 6. Stuff peppers with beef, cheese and cream cheese in layers, finish with a generous layer of cheese
  • 7. Place on a baking tray or in an ovenproof dish and bake for around 20 minutes
