Cauliflower and cheese casserole

  • 2 tbsp butter
  • 1 onion, halved and sliced
  • 1 cup bacon, cubed
  • 750g cauliflower, cut into small pieces around ½ inch
    Sauce
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1 tbsp cream cheese
  • 2 cups cheese, shredded (i prefer cheddar)
  • salt and pepper to taste
    Topping
  • 3-4 slices of cheese
    Instructions
  • 1. Preheat oven to 480 degrees Fahrenheit
  • 2. Cook cauliflower for about 5 minutes, then set aside
  • 3. In a large pan, melt butter
  • 4. Add onions and cook for about 1-2 minutes
  • 5. Add bacon cubes and cook for another 2 minutes
  • 6. Set aside
  • 7. In the same pan, melt butter for sauce
  • 8. Add cream, cream cheese and cheese and cook until completely melted and uniform
  • 9. Season with salt and pepper
  • 10. Add onions, cauliflower and mix well
  • 11. Transfer to an oven safe dish and top with cheese slices
  • 12. Bake for about 7 minutes
